Thanksgiving Countdown: Cheesy Scalloped Potatoes with Potato Chips

Potatoes are an essential part of Thanksgiving dinner. Here is yet another way to cook your spuds into Turkey Day deliciousness. We’ve taken this recipe from Real Simple and modified it to our liking.

  • 4 pounds of russet potatoes, peeled and sliced into 1/8 inch pieces
  • 2 cups of cheddar cheese
  • 3 tablespoons of butter
  • 1 medium sized onion, finely chopped
  • 2 cups of heavy cream
  • 2 cups of whole milk
  • 1 bay leaf
  • 1 teaspoon of thyme
  • 1/4 teaspoon of ground nutmeg
  • salt and pepper
  • 1/2 cup of potato chip crumbs

Preheat the oven to 375 degrees and butter a 3 quarter baking dish. In a large saucepan melt the butter and add in the onion. Cook for 5-7 minutes or until soft. Next add the cream, milk, bay leaf, thyme, nutmeg, 2 teaspoons of salt and 1/2 teaspoon of pepper. Bring to a boil and simmer. Add the potatoes and simmer for 30 minutes. Stir occasionally until the potatoes are soft. Remove the bay leaf and pour the mixture into the baking dish. Sprinkle the cheddar cheese on top. Place on the top rack of the oven and bake for 20-25 minutes. With 10 minutes to go, sprinkle the potato chips on top.
