Thanksgiving Countdown: Sweet Potato Casserole

This dish has marshmallows baked on top of it. Need I say more? Another recipe from Yummly.

  • 4 1/2 pounds of sweet potatoes
  • 1 cup of sugar
  • 1/2 cup of butter
  • 1/4 cup of milk
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/4 teaspoon of salt
  • 1 1/4 cups of cornflakes
  • 1/4 cup of chopped peacans
  • 1 tablespoon of brown sugar
  • 1 table spoon of melted butter
  • 1 1/2 cups of miniature marshmallows

Preheat oven to 400° and bake the sweet potatoes for 1 hour or until tender. After they have cooled peel and mash them. Reduce the oven temperature to 350°. Mix the mashed sweet potatoes, sugar, butter, milk, eggs, vanilla extract, and salt at medium speed with an electric mixer until smooth. Spoon potato mixture into a greased 11- x 7-inch baking dish. Combine cornflakes, pecans, brown sugar, and melted butter in a small bowl. Sprinkle over casserole in diagonal rows 2 inches apart. Bake at 350° for 30 minutes. Remove from oven; let stand 10 minutes. Sprinkle marshmallows in alternate rows between cornflake mixture; bake another 10 minutes. Let stand 10 minutes before serving.
